Dry Fruit Lassi

Lassi is a proper traditional yoghurt based drink. It is a blend of yoghurt, water, spices, dry fruits and sometimes tropical fruits. In summers the most frequently made drink at my place is Mango Lassi. Another yoghurt based thin savory drink commonly made in India is Chaas. Lassi is a sweeter and a thicker version which can be relished by adding various flavors to it.


Sweet Lassi is one of the drinks me and my family relish not only in summer but always. It is so much satisfying to have it after a light meal. A nicely blended heavy dry fruit lassi also makes you skip an afternoon meal. So much filling that you actually don’t feel the necessity to eat something after that. Today in a lazy summer afternoon, me and my son decided to have a thick and creamy dry fruit lassi…. just added some chocolate shavings for him in his mug so that the kiddo enjoys it to it’s fullest.

Ingredients
For Garnishing :
  • 4 tbsp Cashew Nuts Almonds & - finely chopped
  • 2 or 3 tbsp Chocolate shavings
  • - 4 strands Saffron
  • 2 tbsps coconut Fresh - scraped
  • 6 Ice cubes

Ingredients
For Garnishing :
  • 4 tbsp Cashew Nuts Almonds & - finely chopped
  • 2 or 3 tbsp Chocolate shavings
  • - 4 strands Saffron
  • 2 tbsps coconut Fresh - scraped
  • 6 Ice cubes
Instructions
  1. Dry roast cashew nuts , chironjee and almonds in a non stick pan and let it cool.
  2. Now in a mixer, add raisins, munakka, dates/khajoor (seedless), roasted nuts and milk. Blend them all nicely into a smooth paste.
  3. Take fresh thick curd in a large deep bowl and add the dry fruit paste, sugar as per your required sweetness and a pinch of salt. Blend them all together with an electric blender or a hand blender. Do not add water as Dry fruit lassi is served thick.
  4. Refrigerate the lassi for around 30mins or till chilled.
  5. Before serving, pour the lassi into serving glasses, add ice cubes and garnish it with chocolate shavings (optional) , finely chopped dry fruits, fresh scraped coconut and few saffron strands.
  6. Serve Chilled!
