Dora Cake/ Dorayaki – Stuffed Fluffy Golden Pan Cakes From Japan

by Shaheen Ali

Dorayaki(どら焼き, どらやき, 銅鑼焼き, ドラ焼き) is a type of Japanese confection, а red-bean pancake which consists of two small pancake-like patties made from castella wrapped around a filling of sweet Azuki red bean paste. Dorayaki are similar to Imagawayaki, but the latter are cooked with the batter completely surrounding the bean paste filling and are often served hot.

The original Dorayaki consisted of only one layer. Its current shape was invented in 1914 by Usagiya in the Ueno district of Tokyo.

In Japanese, dora means “gong”, and because of the similarity of the shapes, this is probably the origin of the name of the sweet. Legend has it that the first Dorayaki were made when a samurai named Benkei forgot his gong (dora) upon leaving a farmer’s home where he was hiding and the farmer subsequently used the gong to fry the pancakes, thus the name Dorayaki. Recently on face book i came across a very good friend of mine and my co-blogger Garima Narera Sarolia’s (from http://cafegarima.com/) post which she had posted under a monthly theme challenge which by hosed by me itself for this month. She made some amazing Dorayaki’s under Japanese Cuisine theme. Those fluffy pan cakes were something to die for.

Dorayaki commonly known as Dora Cakes in Indian mostly among children. Dora cakes happens to be the favorite snack of Doraemon (the cat robot) which is a very popular kid show. The minute my son saw Garima’s post he asked me to make some for him. So finally my Dora cakes aka Dorayakis are ready. Though the actuall filling is of red bean paste, but due to unavailability i preferred using Nutella which happens to be another favorite of both kids and adults. Instructions
  1. Break eggs in a bowl and add powdered sugar and honey. Whisk well till light & fluffy.
  2. Take all purpose flour and baking powder and sieve into the egg mix. Stir well till smooth.
  3. Now add 2 tbsp of water and stir again to make a flowing batter.
  4. Heat a non stick pan. Add few drops of oil and wipe it off with a tissue paper. Take another tissue paper and wipe off the dry pan once again. This will help in giving perfect golden base pan cakes.
  5. Keep the gas in medium flame ad now take 1/4 cup of batter and pour into the center of the pan. Do not spread it, let it spread by itself.
  6. Cook till you see bubbles appearing. This may take a minute or half.
  7. 7. Flip immediately and cook the other part for 30secs. Be very careful while flipping as the pan cakes go brown to black in no time.
  8. Take off the pan cake on a plate. Make the rest pan cakes with left over batter using the same technique.
  9. For assembling take one pan cake with the golden base down and apply Nutella or any sweet filling you like generously. Place another pan cake with golden side up. Slightly press the sides of the pan cakes with your finger to seal them together. Cut the pan cake from the center. Now you will get a pocket shape with nutella filling inside.
