Dhaba Style Dal Fry

Once in a life time everyone must have visited a Dhaba and had a Dal Fry for sure. No road trip is complete without having a Dhaba stop and enjoying smocking hot Dal Fry with Tandoori roti…. sheer bliss!

The thick dal, slow cooked and later tempered with absolutely aromatic spices gives a feeling of heaven on every bite you take…isn’t it? I have been mentioning about Anisa Arif from quiet a long time now, her spices and her knowledge about the flavors and spice mix is commendable and worth all the praise. Anisa has contributed a lot in my blog, if you are a regular reader, you might come across Zaiqa Spice Mix often in my articles.


Few days back Anisa approached me and asked me to try few of her recent creations. She sent me few samples among which Dal Fry was something that grabbed my attention. I can understand that a curry or biryani etc needs a variety of spice blend, but i was actually keen to try the dal fry mix so as to know what magic i does to a simple dal.

As my anticipation built up a lot, finally i took out the packet from my pantry and tried this wonder spice today.

I must admit that non of my dal preparations tasted as good as this which i made using Zaiqa Spice Mix. Instructions
  1. Pressure cook dal by adding water, turmeric powder, red chili powder, salt and coarsely chopped tomatoes till 4-5 whistles or till the dal cooks completely.
  2. Transfer the dal into a bowl and roughly stir with a ladle. Dhaba style dal is often thick so do not whisk it completely.
  3. Heat ghee in a wok and add cumin, dry red chilies and hing. As soon as the cumin crackles, add chopped garlic and green chilies.
  4. Now add chopped onions and saute it till golden in color.
  5. Now put the Zaiqa Dal Fry Spice Mix into the onions and fry everything nicely. Take a spoon and separate a table spoon of tadka being prepared in a small plate or bowl.
  6. Pour in the dal into the wok and let it come to a boil. Stir well such that the tadka mixes well with the dal.
  7. Transfer the dal in the serving bowl and add the additional tadka which we kept aside before.
  8. Granish the dal fry with finely chopped coriander.
  9. Serve hot with plain steamed rice or roti.
