Creamy Cauliflower Soup

A perfect soup is rich, creamy and absolutely comforting. I have grown up seeing my mom making some amazing aromatic soups for my father. Even during our illness mom comes up with some super aromatic and flavorful soups that works as an energy booster and comforts us a lot.


Out of  many good soup preparations one of my all time favorite is the super creamy, buttery cauliflower soup. Cauliflower and me has a strong love – hate relation. Sometimes i fall in love with the humble veggie so much that i can have it thrice a day. And sometimes i get so bored that i feel like throwing it all….lol. But despite of all my tantrums the cauliflower still happens to be my all time favorite.

A simple aromatic soup that leaves you guilt free (if you omit the butter) is something to die for. Handful of ingredients which are easily available at house pantry give you a rich and flavorful soup that can be relished at almost any time of the day. My son doesn’t like cauliflower much, but this soup indeed is something he wants to have a lot. There are quite a lot of variations that can be done in the recipe… but i preferred to keep it original, like my mom made for us. So let us move on to the ingredients required and the recipe … 🙂

Instructions
  1. Wash cauliflower and cut into small florets. Chop onions roughly and keep aside.
  2. In a non stick pan heat olive oil and add chopped onions and cauliflower and saute them.
  3. Add little water and allow the florets to cook till they turn mushy. You may add crushed pepper corns, red pepper flakes and salt now. Close the lid and cook.
  4. Once the florets are soft and done, turn off the gas and allow it to cool.
  5. Now take a mixer grinder jar and transfer the cooked florets mix into it and blend all to make a fine paste. Add water little water and blend again.
  6. In the previous pan heat a tbsp of butter and transfer the soup mix , add fresh cream and cook again for another 4-5 mins till it becomes thick and creamy. You may now add chopped cilantro too.
  7. Meanwhile in another small pan , heat 1 tsp butter and ad chopped garlic and saute them till golden in color. You can also ad few finely chopped florets in the tempering.
  8. Once the soup is done, transfer it into the soup bowls and add little tempering to each bowl with a spoon.
Recipe Notes

Serve hot with soup sticks, breads or simple toasts.
