Aguas frescas (Spanish “cool waters”) are a combination of fruits, cereals, flowers, or seeds blended with sugar and water to make light non-alcoholic beverages. They are popular in Mexico, Central America, the Caribbean, and the United States.

Coconut Cucumber Agua Fresca is a perfect cooler in summers and even in humid days. A healthy and a refreshing drink that my family loves to have on Sunday afternoons.

Instructions
  1. In a blender jar, add chopped cucumber, coconut milk, lemon juice and sugar. Blend all to make a fine mix.
  2. Add water and ice cubes and churn again.
  3. Pour the drink into serving glasses and add few ice cubes, cucumber and lemon slices and give a quick stir.
  4. Serve chilled !
