My sweet cravings are going beyond control now. Baking is something i love to do whenever i am free, and specially when i’m craving for something exotic, i prefer to bake. I might be sounding crazy but it’s true. Baking is severely addictive and equally therapeutic. Would you believe that whenever i am stressed out, i just try and bake something and i’m sorted. Out of many cakes, my most favorite flavor is one with lots of fruits.
Apple and Plum Cake with Cinnamon flavor is one of the most exotic cakes that can be served in festivals like Christmas and also if you have important guests at home. The cake is simply aromatic and leaves a fruity punch on your palate and the best part is that it is eggless. Soft, fluffy, aromatic, this cake is a must try for all those who love baking at home.

- 2 cups All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 pinch Salt
- 1 cup Sugar Granulated
- 1 cup Unsalted Butter Melted
- 3/4 tsp Cinnamon Powder
- 2 - 3 tbsps Milk
- 1/2 tsp Lemon Zest
- 1 tsp Vanilla Extract
- 6 tbsps Curd Thick (whisked)
- 4 Plums (pitted & sliced)
- 1 Apple Big Red (crescent shaped slices)

- Sift flour twice and add baking powder, baking soda and salt. Mix with a fork and keep aside.
- Pre heat the oven at 200 degree C for 10-12 mins.
- Line or grease a 8" inches spring form pan and keep aside.
- In a large mixing bowl, add sugar and butter and whisk with an electric blender till sugar dissolves and the mix becomes thick and creamy.
- Add whisked curd and blend again.
- Now add in the lemon zest, vanilla extract and mix with a spatula.
- Add in the dry flour mix to this wet mix slowly and fold in to make a batter.
- Now add milk and cinnamon powder and give a quick mix again. Do not beat the batter, just fold in till everything incorporates well.
- Pour in the batter into the baking pan and tap to break the air bubbles formed.
- Take apple slices and arrange it in the outer circumference. Now place few plum slices in the center and bake the cake in the oven for 35-40 mins or till the tooth pick inserted in the center comes out clean.
- Note : Temperate of the oven various from one to another, hence monitor and control the baking temperature accordingly.
