Yayy! It’s Christmas again… the best time to indulge yourself of all kinds of guilty desserts. For once forget all the diet and enjoy the festival with some amazing baked goodies. This year I am planning to make a special Christmas meal, and to begin with my first stop was desserts. It’s not just this time i’m making desserts first, in fact for every reason i feel like making desserts in first place. Specially when it is a classic aromatic and flavorful cake. Yes, this is a Carrot and Cinnamon cake, as i never bake boozy cakes, hence for me anything that gives equally delicious flavor and a captivating aroma is a must.
I made a Classic Carrot & Cinnamon Cake today and frosted it with a layer of cream cheese. Decorated with some hand made (DIY) tree toppings and some star sprinklers. Now wasn’t that easy? Yes i like keeping things simple yet beautiful…isn’t it! Frosting the cake is completely optional, as it is for the occasion hence i did this much, or else i prefer keeping my cakes naked.

- 2 cups all purpose flour
- 1.5 cups sugar
- 1 cup cooking oil
- 4 Eggs at room temp.
- 1 cup carrot grated
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp Cinnamon Powder
- 1 tsp vanilla extract
Ingredients

- Sift flour, baking powder and salt together in a large mixing bowl and keep aside.
- Add granulated sugar and oil in another mixing bowl and whisk till sugar gets dissolved completely.
- Now add eggs, one at a time and whisk till light and fluffy.
- Add cinnamon powder, vanilla extract and mix again.
- Take the dry flour mix and start adding it in the wet mix slowly and fold to make a smooth batter.
- Add a cup full of grated carrot and give a nice mix till everything incorporates well.
- Pre heat the oven at 180 degree C for 10 mins. and meanwhile grease or line a 8"inch baking pan.
- Pour in the batter in the pan and tap gently to break air bubbles.
- Place the cake tin in the middle rack of the oven and bake for 30-35 mins or till the tooth pick inserted comes out clean.
- Transfer the cake tin on a wire rack till completely cool.
- Frost it with some cream cheese or any of your favorite icing and decorate it accordingly.
- Collect all the ingredients on your counter before starting anything.
- Make sure all the ingredients should be at room temp.
- Temperature may vary as different ovens have different set up and control.
- Frosting and garnishing is person based.
