Chocolate Cups

February had been a crazy month for me. Got a friend back home, then valentine’s day and now ending up with my son’s annual exams. Kids have all the reasons to black mail parents when they make them sit and study. So does my son, everyday he wants something new just because he listens to me and study well…. lol 


Summers are here so why not serve your kids with something delicious, their all time favorites and chilled. Yes, how about making some chocolate cups filled with easy cream cheese frosting and topped with their favorite funky and colorful confetti. Great… isn’t it?

Well chocolate is certainly an energy booster and my child is one such crazy lad in my home that doesn’t hesitate to eat the dark chocolate compound as well. Today while checking my fridge i noticed that i had around 50-60 gms of Morde compound left in the box. As mentioned above, Valentine’s just passed by and we already had enough of cakes and cookies, hence didn’t wanted to try them again.

So finally though to use the left over chocolate in not mixing with anything , rather keeping it the way it is with just a simple twist. Yes the twist was shaping the chocolate into cups. The most easiest thing one can ever do with chocolates and gather all praises from the family. Trust me when your family see this, they’ll literally go gaa gaa over it and assume that you made some rocket science in kitchen today.

Chocolate cups can be serve by filling anything you like,…example – Mousse, cream cheese, butter cream, fresh cream and fruits etc etc.

Instructions
How to make chocolate cups :
  1. Melt chopped chocolates and coffee powder in a microwave or a double boiler.
  2. Stir well to make it smooth and flowing.
  3. Line a muffin tray with paper liners or silicone liners, whatever you prepare.
  4. Take a tea spoon of chocolate and pour in a cup cake liner.
  5. Spread it evenly to all sides with a silicone brush and place it inside the muffin tray.
  6. Similarly fill and spread chocolate in other liners too and place them all in the muffin tray. I have a small tray so i can get 6 at a time.
  7. Refrigerate it for almost an hour or till the chocolate is set. If you are in a hurry, then you can place the tray in the freezer too. It will take less time for the chocolate to set.
  8. Once the liners are set, take out one cup and hold it opposite the light, if you see and transparent patch, then fill it again with the left over chocolate.
  9. Do this for all the other liners too. Applying a second coat makes the cup stronger.
  10. Again refrigerate it till it sets completely.
  11. Now carefully remove the paper liner or the silicone liners and keep the chocolate cup separate. You have to very careful while tearing off the paper liners else the chocolate cup may break.
  12. Place the cups in the fridge till we prepare the cream cheese frosting.
How To Make Cream Cheese Frosting :
  1. In a mixing bowl, add cream cheese and butter. Whip it well till smooth.
  2. Now add icing sugar and whisk again till everything combines well and become smooth.
  3. If the frosting looks thin then add more icing sugar and whip again or if its too thick then you may add little more cream cheese to adjust the consistency.
  4. Add strawberry extract and color to the cream cheese frosting and whip again till color mixes evenly.
  5. Take a piping bag with any of your favorite tip ( i used star tip) and fill the bag with the frosting.
  6. Take out the chocolate cups from the fridge and fill the cream cheese frosting into each cup giving circular motions.
  7. Sprinkle some confetti or top it with any of your favorite fruit or oreo biscuit etc and serve chilled.
