VALENTINE DAY is gone and by now all the lovers out there must have blotted with hell lot of desserts, chocolates and other Vday goodies. Yeah, so did I 🙂 I enjoyed this special day with one special love of my life…FOOD! Though i don’t need any particular day to celebrate my love for food, but as you see God and more often people give us enough reasons to express love …love and some more love towards your beloveds. Valentine Day signifies love and no love is complete without chocolate and the most romantic fruit, that particularly arrives this season, yes you got me right…Strawberries! 

Now you must be wondering what is my today’s post all about? Well it’s all about recycling, reusing, creating new recipes and more over it’s all about love for food. I believe a true food lover never wishes to waste anything that is edible. Just like you even i hate wasting food, specially if it’s one of my favorite, i don’t mind finishing the left overs.

Following the rituals, i made a heavy duty, super calorie loaded, rich and generous strawberry and chocolate chip loaf covered with dark chocolate ganache on Valentines day. The cake was amazing and was finished in no time, but the one killer stuff that didn’t finish was the ganache. Yes, i got around 3-4 cups of ganache left in the fridge. So before it was too late to recycle it, i thought to make a delectable and sinful dessert named CHOCOLATE AND COFFEE MOUSSE. I started making a mousse but it was somewhere closely related to a Pannacotta. But still i would call it a mousse as it was soft and porous from inside.

Instructions
  1. Take two microwave safe bowls. Add 1.5 tsp Gelatin and 1/4 cup water in first bowl. Stir and allow it to rest for 4-5 mins till gelatin blooms up.
  2. Add 1 tsp gelatin in another bowl along with 1/4 cup minus 1 tsp water. Stir and let it rest till gelatin blooms.
  3. Take out the left over ganache from fridge, scarp it with a spoon and collect in the center of the bowl.
  4. Heat a pan and add 1 cup of heavy cream and wait till bubbles appear.
  5. Immediately turn off the heat and pour in the hot cream all over the left over ganache. Let it rest for 3-4 mins.
  6. Whisk the cream and ganache till its flowing and lump free. Set aside.
  7. Take the first gelatin bowl and microwave it for 30 seconds on high till the bloomed gelatin dissolves back again. Let it rest and cool till room temperature.
  8. Add the cool gelatin mix to the thin ganache and stir in nicely.
  9. Pour the mix in serving bowls or glass till 3/4 th of the glass. Set in refrigerator for 45-50 mins.
  10. Do the same process for the other bowl of gelatin as well by microwaving and cooling till room temperature.
  11. Meanwhile heat a pan again and add 1 cup of heavy cream . Wait till bubbles appear and turn off the heat. Allow to rest and cool till room temperature.
  12. Add in the gelatin to the heavy cream along with 1 tsp coffee powder and vanilla extract.
  13. Whisk for another 2-3 mins till everything incorporates well.
  14. Take out the set chocolate mousse and pour the cream mix over till the rim of the glass or bowl.
  15. Again set the cream in refrigerator for 45-50 mins.
  16. Once both the layers are set, garnish with some strawberry slices, cadbury nutties and dust some coffee powder on it.
  17. Serve chilled!
