Bread Pakora

I have spend a around 15 years in Bhopal and within all these years i discovered a lot of delicacies that the city had to offer. A small hawker named Banney Miyan use to put up his stall near my residence and was suppose to be very famous in Bhopal for making Bread Pakodas. Even i was very curious to see who that person was and taste his famous Break Pakodas. Once i got an opportunity and trust me I had never in my life before tasted such amazing flavorful bread pakodas. He use to put up his stall every day from morning 7-9am and his snack use to get over withing hours. The filling what he used to put inside the pakoda tasted magical. Today suddenly out of no where, i was remembering those pakodas and it was raining luckily…. what next! just took out my apron and prepared those awesome bread pakodas for breakfast. Though i cannot replicate the taste what he use to give to our palates but even my bread pakodas were something worth to die for. Wanna see how i made these crunchy munchy tea time snack? How to make filling for bread pakoda
  1. Boil, peel and mash potatoes and keep aside in a bowl.
  2. Heat 2 tbsp 2. oil in a wok and add cumin and mustard seeds. Let them crackle.
  3. Now add chopped ginger and garlic and saute till golden.
  4. Add chopped onion and green chilies along with some broken curry leaves (that is completely your choice). Fry all till the raw smell of the onion goes off and it turns translucent.
  5. Add turmeric, red chili powder, coriander powder and garam masala powder and fry well for couple of minutes.
  6. Now add the mashed potatoes and mix everything very nicely with the spatula such that the spices incorporates well with the potatoes.
  7. Adjust salt and add fresh chopped coriander. Mix all nicely and fry for another few seconds.
  8. Turn off the gas flame and let the filling cool down completely.
Meanwhile start doing the preparations for the pakodas.
  1. For making 6 portions of bread pakodas we need 6 slices of bread. Try using big sized bread.
  2. Firstly take a clean bowl and add gram flour, salt, red chili powder and soda. Add sufficient water slowly to make a smooth flowing batter. Whisk well to avoid lumps. Make sure the batter should be neither too thick nor too thin. The consistency should be flowing not running. Keep aside.
  3. Take a slice of bread and spread the potato filling which we prepared generously. Spread it all over the bread slice using a spoon or a spatula.
  4. Place another bread slice to make it look like a sandwich. Similarly prepare two more sets. Now you have 3 sets of potato stuffed bread sandwiches. Keep them aside in a tray.
  5. Heat oil in a wok. The oil should be sufficient enough for deep frying.
  6. Once the oil is piping hot, simmer the gas flames and take a set of bread sandwich and dip it into the batter such that the batter coats it well from all sides.
  7. Carefully slide it into the oil and deep fry from both sides till golden in color.
  8. Once the pakoda is fried from both sides strain it into a paper napkin or kitchen towel so that the excess oil can be drained out and soaked by the napkin.
  9. Similarly make two more sets of bread pakodas.
  10. With a sharp knife, slice the bread pakoda from one end to the other diagonally such that it separates into two parts in triangular shape.
  11. Serve hot with tomato ketchup or any other dip which you like with a hot cup of tea.
