RAKSHA BANDHAN is round the corner and everybody must be exited for it. I’m sure many might have already planned the menu as well for their beloved brothers. From past few days i have been seeing everywhere on social media, ladies making amazing sweets for the occasion. Though i do’nt have a brother but i do have a right to celebrate the purity of the festival by making some pure home made sweets.


Raksha Bandhan is the festival where the sister ties a knot of love and faith on his brother’s wrist. The pious thread is known as Rakhi. These days we get to see many fancy and designer rakhi’s even made of gold and silver. Rakshabandhan is a promise from a brother to his sister that he will forever take care of her in every possible way. He will protect her from evil and shower his love on her all life. Though i don’t have any real brother but yes, i certainly have two brother’s from different mothers in my life whom i love and respect a lot. So today on this special occasion i would like to take the opportunity to wish both my brothers a very HAPPY RAKSHA BANDHAN!

During every festival it is seen that the market gets flooded with all sorts of sweets for the occasion. Along with that another common thing seen that the store bought sweets are not that pure and fresh as compared to what we make at home. Hence keeping all the store unfair conditions in mind, today i thought to bring you an easy recipe that can be made quickly with limited ingredients.. yet pure, rich, royal and melt in mouth. When it comes to dry fruits we always pick either cashewnuts or anjeer for making katli/burfi. But here i brought you something amazingly delicious which i am sure every brother will love to have. BADAM PEDA aka ALMOND FUDGE , easy, quick and absolutely sinful.

So let us quickly proceed to the ingredients required and the procedure.

Instructions
  1. Heat 2 cups water in a pan. Let it boil and add almonds in it. Boil for 2 mins and turn off the flames and allow it to cool.
  2. Drain water and spread the blanched almonds on a clean dry kitchen towel. Fold the towel and rub the almonds inside gently to absorb the excess water.
  3. Once the skin gets loose, remove it and keep the almonds separate.
  4. Heat a non stick wok and dry roast the almonds till the moisture evaporates completely. It may take few seconds only. Allow it to cool and then grind it all to make a fine powder.
  5. In another pan heat 5 tbsp of water and add ghee and sugar. Boil it nicely till the sugar melts completely. You may also add cardamom powder too at this stage.
  6. Lower the gas flames and now start adding the powdered almond into the sugar syrup. Add slowly by stirring continuously. Break lumps if formed.
  7. Let the mix cool for some time. Transfer the mix into a big bowl or a broad base plate.
  8. Add 1 tbsp of milk maid or any other condensed milk you have and start kneading to make a fine dough.
  9. Grease your palm with some ghee and pinch a lemon sized ball from the dough. Roll it between your palm to make a smooth ball. Flatten it a little to shape it like a peda. With your finger tip make a small depression in the center and keep aside. Similarly make rest of the pedas and keep aside.
  10. For garnishing, place one dry rose petal, one piece of chopped pistachio and a saffron strand. You can also decorate the sweet with silver leaf , but that is completely optional because many people don't use it.
Recipe Notes

Store the pedas in an air tight box and consume within 2-3 days.
