Vietnamese Rice Paper Rolls are a quick snack that can be made both in sweet and savory versions. Typically made with raw vegetables and shrimp, rice paper rolls are healthy and an amazing snack option for your brunch parties. The most amazing part of this dish is that it can be made out of almost anything that comes into your mind. I often make rice paper and apple salad that goes best with my weekend meals, but i also prefer making Apple & Cinnamon Rice Paper Rolls served with Honey and Apple sauce. The recipe is simple and quick but definitely needs some skilled hands. The rice paper is not just healthy but also very delicate to handle, hence this dish needs continuous monitoring and you need to be very fast while assembling.

  1. For making the sauce , first wash and peel the apples and chop into small pieces.
  2. Collect the pieces in a bowl and keep aside.
  3. Heat butter in a microwave safe bowl and add in the apple pieces. Mix well and microwave it at high for 8-10 mins or till the apple turns mushy.
  4. Take off from oven and allow it to cool.
  5. Puree it in a blender and collect in a bowl, you can also mash it well with a fork to get that chunky texture.
  6. Heat 1 tsp butter in a separate microwave safe bowl and add the puree along with honey and a pinch of salt. If you are using salted butter then avoid using additional salt.
  7. Microwave it on high for 10 mins or till the puree starts to thicken slightly.
  8. Take the sauce out from the oven, and add cardamom powder (optional) and apple pieces (optional). Keep aside to cool.
  9. For making rice paper rolls, take 1 cup of water in a flat bottomed tray and keep near the counter where you have planned to make the rolls.
  10. Take one rice paper and immerse in water and hold for 4-5 secs only. Immediately take off the rice paper and spread on a clean counter.
  11. Dust some cinnamon powder all over and place handful of apple slices horizontal, in the center leaving 1/2 inch gap from sides.
  12. Fold in the two corners inside and from the bottom start rolling towards up. Hold the apple slices inside and complete the roll.
  13. Spread roasted sesame on a plate and roll over the rice paper roll such that the seeds coat all over nicely.
  14. Similarly prepare the rest of the rice paper rolls. Remember you have to fast while doing this, as the rice paper may tear while rolling if left for a long time.
  15. Cut the rice paper rolls into two half and serve with apple and honey sauce.
