Appe – Paniyaram with Peanut Dip

A year back when i used to live in Bhopal, every winters the Maharashtrian community use to organize a fate in which the ladies used to come up dressed traditionally to their respective food stalls. Every year we use to wait for the winters to come so that we could go to the fate and enjoy their delicacies. Amongst many varieties my most favorite was APPE WITH PEANUT DIP.

Aaaah! the thought itself makes my mouth water. That time i used to call it mini idlis….lol


Later i came to know through a Marathi friend of mine that it’s Appe and also known as Panniyaram in South India.

Since then i wanted to buy an Appe Pan so that i could relish and enjoy this small soft blobs with my favorite dip. Finally my pan came home and the first thing i did was, i introduced my son to this awesome delicacy. Luckily he loved them too. So now it was so much fun making Appe coz i know i have a partner in crime….lol

Well Appe pan is a magical pan. It can be used for making cake pops. saboodana cutlets, sooji appe etc etc….the list is long. To start with the series i m first sharing the simple Appe recipe, but soon i shall be posting many more amazing recipes made in Appe Pan.

Instructions
  1. Wash rice and dal together and soak them overnight or minimum 4 hours in fresh water. Grind them into a fine batter the next morning or after 4 hours.
  2. Now the most important step is to fermentate the batter. If you have sufficient time then let the batter rest and fermentate for minimum 2 hours. But if you are in a rush then you may add baking soda in the batter and mix well. Adjust salt.
  3. Heat the appe pan and add few drops of oil in each section.
  4. As soon as the oil is piping hot pour the batter into each section. Make sure that you do not fill the batter till top, because it will rise and pop up.
  5. Close the lid for 30-40 sec and then with the help of the wooden spatula turn the appe upside down. Again cook for few seconds or maximum a minute. Keep the flames from low to medium.
  6. Take off the Appes in a plate and similarly repeat the same again to make more.
Note :
  1. If you have dosa batter at home, you can use them to make Appe.
  2. You can add spices or veggies as per your choice in the batter to make veg ape.
To make Peanut Dip :
  1. Heat oil in a pan and add cumin to splutter.
  2. Now add whole red chilli and peanuts to saute.
  3. Cool the mix and grind them with little water making a fine dip.
  4. Add dessicated coconut and stir well.
  5. Adjust salt and water as per the required consistency.

Note :

The peanut dip can also be enjoyed with Idli, Dosa, Cheela etc.
