Any special occasion calls for a celebration and no celebration is complete without desserts and sweets. In India for every good thing or news we have a culture to make something sweet and share our happiness with friends and family. One such dessert that is made in every Indian home is Suji Ka Halwa. One humble dessert that never goes wrong and once in a life time everyone try making it with trial and error method. Technically there is no one perfect recipe for halwa….because some like to have it in a sticky form, where as some like dry. So it totally depends on one’s choice.

In India the halwa travels from place to place and adapt various flavors that are not just delicious and exotic but also carry a tale along. A tale of it’s origin and significance. One such amazing version of suji halwa is ANANAAS SHEERA aka Pineapple halwa. Semolina roasted in ghee and favored with saffron and pineapple makes a an amazing dessert that is loved universally. To add a bite we add some fresh pineapple pieces to it as well. Served as an offering to God and also to the disciples, Ananaas Sheera is a show stopper in all forms.

Instructions
  1. Soak saffron strands in 1 tbsp milk and keep aside for minimum 45 mins before cooking.
  2. Heat ghee in a wok and add cardamom powder and semolina. Roast till the semolina is light golden in color.
  3. Once the semolina is golden and starts leaving a roasted flavorful aroma of ghee, this is when you have to add chopped cashews and roast for another few minutes. Roast the semolina in low flame to avoid getting burnt.
  4. In a separate pan add water and heat simultaneously.
  5. Once the semolina is nicely roasted, add sugar, pineapple puree, pineapple pieces, saffron soaked milk and water.
  6. Mix well and keep stirring till the water dries up and the halwa starts leaving the sides and gather as a lump. Mix till the required consistency is reached.
  7. Turn off the gas, pour in a tbsp of ghee on top and serve in bowls.
  8. Garnish with some saffron strands and pineapple pieces and serve hot!

Thanks much Pooja. You can skip adding puree If your son it too small bcz it’s winters and pineapple usually causes throat infection and cold. Just add few pieces and that will be enough to get the fruity flavor. 🙂
